Garden Tour & Green Bean recipe

Yesterday when I was at a doctors appointment with my farmer friend I came upon the recipe in a magazine….jotted it down….and cooked it last night.  It was simple and delicious therefore I’ll share with you and have in my archives for future retrieval.  The recipe was shared by Tracy Smith, an organic farmer in NH.  Traciesfarm.com is her web page if you’d like to peek around at any of her recipes, I plan too!

Green Bean Salad

  • 1 lb fresh green beans
  • 2 T. olive oil
  • 1 garlic clove
  • 2 T. minced fresh parsley
  • 2 T. lemon juice
  • 1 teas. kosher or sea salt
  • 1/2 teas. freshly grated lemon zest
  • 1/2 teas. freshly ground black pepper

Cook green beans, combine the remaining ingredients, mix & serve!

Maine Man loved it.  His love & appreciation for the food I cook makes experimenting with new recipes and foods a whole lot more fun! Winking smile

You are the goddess of green, gorgeous veggies my dear. I hope you are having a nice family day with your clan this weekend. Are you selling some of those veggies and where can I get some ? Off to the farmers market in Brunswick today, fiddlers, families and lots of lil doggies !

AG, thanks we don't sell veggies but if you come visit we'll give you some. We are having a pig roast Aug 6th for John's 40th...you guys should swing by. Love going to the farmers market!
